Young Sheldon season 7 will finally be The Big Bang Theory it's supposed to be. Despite the countless plot inconsistencies between the Chuck Lorre co-created shows, the writers maintain that they still exist in the same universe. Because of this, Young Sheldon is forced to end with seven seasons despite its continued success. When the spin-off debuted, it primarily functioned as Sheldon's origins story, with the rest of the Coopers playing a role in his arc. In recent years, however, it has become more of an ensemble, with the rest of the family having their own compelling arcs.
Based on the ratings, the shift in storytelling proves to be effective. Young Sheldon season 6, which focused more on other Cooper family members than Sheldon, posted show-high ratings, further backing this idea. Interestingly, however, it's the year when Sheldon was the least prominent that he has ever been in his own show.

Lorre confirmed that Young Sheldon will tackle Sheldon's story until he is 15 years old. This means that the show's final season will go beyond his years in Medford, Texas, and into his earliest days in Pasadena, California.
For context, Sheldon started his post-graduate studies at Caltech when he was just 14 years old, which means that when he finishes his study abroad program in Germany, he will be done at East Texas Tech at the end of the year. Based on The Big Bang Theory canon, the boy genius has an eventful year ahead of him. Aside from his big move, George's impending death also nears.
Exploring Sheldon's story at 15 means that the prequel will show at least his earliest days in Pasadena in Young Sheldon season 7. The Big Bang Theory did reveal some snippets of what his life was like when he first started at Caltech — back when he still hadn't met Leonard and subsequently became friends with Raj and Howard.
That being said, the nerd-centric sitcom never really got the chance to fully explore that time in his life. He oddly barely talked about it, giving Lorre and his writers the creative leeway to craft it the way they want to.
